Cocktail Feature: Sea Salt Ginger Fig Sour
This month’s cocktail feature is an absolute summer stunner. Say hello to the Sea Salt Ginger Fig Sour, created by Chef Meredith Ouzounian. This cocktail is special because you’ll only be able to make it during fig season, which generally is from August to October. Follow the steps below to make a cocktail that’s truly one of a kind.
Step One: Gather ingredients for the Ginger Fig Syrup
- 2 lbs fresh, ripe black figs
- 5 oz brown sugar
- 2 inches ginger, peeled and sliced
- 1⁄2 cup filtered water
Step two: Cooking instructions
In a medium heavy pot, place figs, ginger, sugar, and water. Cook on medium
heat for about 10-15 minutes, until figs are soft, and caramelized. Strain through
a fine-mesh strainer. Reserve syrup for cocktails in mason jar.
Step Three: Gather ingredients cocktail creation
- 1 oz Costa Tequila Reposado
- 1 oz. Ginger Fig Syrup
- 1 egg white (fresh, free-range)
- 1/8 tsp fine sea salt
- 1 oz fresh lime juice
- ice
Step Four: Cocktail Creation
In a cocktail shaker, place ice, and all remaining ingredients. Shake for about a minute. Pour through strainer into a chilled martini or short glass. Garnish with crystalized ginger and fresh fig
